Courtney's Visit


Courtney came to visit this weekend! It was so much fun to have her and I am so glad she came! 

We packed everything we could into her short stay:

- Lunch at Cafe Sabor
- Ice Skating 
- Hot Tubbing
- Movie Night
- Church
- Mini Pizza Party

Unfortunately, I don't have a camera at the moment, so I didn't get any pictures.
Luckily, Courtney saved the day with her phone and we managed to get one picture from the trip!


For some reason, Courtney didn't bring any warm clothes with her! Don't worry, I dressed her well  :)

Labor Day Weekend

Climbing

This year I have gotten really in rock climbing.
As it has gotten warmer we have been going outside, but I am not the biggest fan of the limestone that is in Logan.
I have been craving granite!

I went to Rexburg this weekend (sorry if I didn't get to see you!) and I decided to take advantage of the opportunity to climb on granite. 
I rounded up Porter and Whitney (who had stayed most of the weekend with me and we had so much fun!) and we were off!

Long story short:

- Whitney and I almost got lost twice on our way there
- We almost died once (although Whitney would say it was more)
- Porters car sounded like it was going to fall apart and we were all a little nervous.
- We forgot an ATC so we "made due" with a cool knot (Porter has way too much trust in me)
- I'm not sure who got the better work out: Whitney jumping up the rock, or Porter pulling her up.
- Whitney got blisters / huge boils from the heat of the rock on every finger
- I got heat exhaustion about four moves into my first climb and almost passed out / couldn't see anything on several occasions.
- None of us brought water
- For some reason, we thought it would be a good idea for the girl who was about to pass out (aka me) to belay Porter as he took the climb down.
Yeah, NOT a good idea! (I had Whitney holding the rope just in case, and it was a close call.)
- On the way home I was blinded by the sun, so Whitney stuck her head out the window and literally guided me as I drove.
- I had a headache for the next 24 hours

And we all survived to tell the tale!

Between Porter taking care of my heat exhaustion (ready at any moment to catch me if I fainted and dipping his coat in the river to put on my head)
and bandaging Whitney's blistered hands, I'm pretty sure he never wants to take us climbing again. Ha!

(We have pictures and even a movie, but there have been some technical difficulties in getting them. So sad.

Bishop & Sister Forbush

Whitney and I visited Bishop and Sister Forbush. They are seriously the best! I loved just hanging out with them and catching up on life.
It was just like the good old times. It seems like only yesterday we were there going hot tubbing, singing karaoke, cutting our fingers with sharp knives that poor college students aren't accustomed to, playing in their amazing back yard, and just hanging out.

Fun times with mom and dad just hanging out, talking, playing speed scrabble and taking walks.
It's good to go home.


Moving Day!

Labor Day was spent moving into my new apartment! I cannot say thank you enough to my parents and sister for all their help.
I am so grateful for them! It made the day so much fun to have them with me in Logan. They are the best! 

I will miss Chelsey, but I am moving in with some amazing friends and am excited for the change!

The bad part is that I hurt my back somehow in the move. I feel like an 80 year old woman.
Good thing I work at a chiropractic office! I might actually have to get adjusted  :)

Winner, Winner, Chicken Dinner!

Winner, Winner!

Friday was Dave's birthday, so we had a poker night.

Guess what!? I dominate in poker!

We started with Craps and I am pleased to say that I continue to hold the record for undefeated first place in the tournament! I still don't fully understand what I'm doing, but Dave didn't have to tell me I was doing illegal things as often, so I think I'm progressing at least. (It's all luck)

Satisfied with my win, I was ready to go home and get some sleep along with everyone else who had come that night. I had my coat on, keys out, when somehow I found myself back at the table for a game of Hearts. Everyone else had left and it was just me and the boys. I thought I had played Hearts before, but apparently I was wrong. Add that to the fact that I was super tired and the boys all thought I was the poor girl to be pitied. Yeah right! I showed them all up and took first place! The best part is that, unlike Craps, I actually knew what I was doing and played strategy. I love card games!

I'm ready for Vegas, baby!

Chicken Dinner!

Good news! Last week my lesson went really well! 
(yes, I know it is slightly ironic that I go from poker to the gospel. such is life!)

After we were all joking about how I was ready for the big class now! My class currently consists of about 15 people max and I am perfectly happy to keep it that way. Dave told me, "Your style works really well for a small class like this, but I don't think it would work very well in the big class." Thanks Dave  :) 

Thursday night I got a call from Ted, my Sunday School guy who is seriously the best! Apparently with Spring Break this weekend, there were no teachers to teach.... except me! I would be in the big room and it would be all combined into one class. Talk about intimidating! I kept hearing Daves words ringing in my ears. 

The topic was the applying the Atonement in our life, and it was so good for me to study at this time! The lesson went really well and there was a lot of really good discussion. I had several compliments after and one guy even asked for the talk I had referenced.  I made cookies so people would remember them instead of the lesson just incase it didn't go over too well (which, thankfully it did!) They were a big hit.... even with having twice as much oil as was called for. oops!

Now we all know I can teach the big class, so I never have to do it again! Right?  :)

And now it's on to the Chicken Dinner part of the day at Pot Luck! I'm so excited! I better get my cans of fruit ready.

What's Going On

I guess it's about time I update this thing. In my defense, I do have a reason for not being on here! That reason is that I have not had a computer to update on because mine decided to completely crash. 

Long story short, I ended up getting a completely new hard drive and in the process, the computer people accidentally reset my computer to last year. That means that anything I have done in the last year is gone. That also includes the updates to my Adobe programs and Microsoft Word.

Awesome. 

Ok, so I guess it isn't 100% gone. (except the program updates really are gone) They gave me my old hard drive back (yeah, the one that is crashed and moving slower than snail) and this fancy thing that I hook up to my computer so I can manually move everything from the last year back over to my computer. I know you're thinking, "that is a lot of stuff to move over by hand!" But let me put it in perspective for you - The other day I decided to watch You've Got Mail while I transferred things. By the time I finished the movie I has successfully transferred six pictures. Six! So as bad as you thought it would be when you heard I had to do a year's worth by hand, it will probably, in actual reality, be about twelve times worse than that. 

The other big thing that has been happening is that I am on the job hunt! That is a story that I will not get into on here, but most of the people who actually read my blog already know about this, so I don't feel the need to get worked up about it. Suffice it to say that it was not right and I'm pretty sure everyone, including my co-workers, are fully aware of that fact.

Other than the fact that I no longer have a job and my computer has been problematic (oh yeah, and now my printer is messed up too) life has actually been a lot of fun! And I'm not just saying tht, it really has been great!

I went home for our "family reunion" and did the fun run! Well,  my dad did the the 5k (I think) and the rest of us did the mile fun run.


They started off the race by saying "ok kiddos!" and proceeded to explain how there would be a grown up at every corner to help us know where to go. This is my kind of race!

Grandma and I were perfect partners for each other. We even stopped along the way to take pictures! We were most excited about getting the official marathon T-shirt because we knew it was our only chance at getting one. 

Back in Logan, we got a new bishopric! My bishop definitely knows who I am and greets me with a smile every time I see him! He even almost knows my name! Who knows, if I'm lucky I may even get a calling! 

Our ward has changed up a ton and I am meeting so many new people and doing fun things.

For Labor Day my family came to visit! We did all the exciting things there are to do in Logan - 

Willow Park Zoo (AKA the Bird Zoo)

River walk and climbing up the Dam

So.... probably not the most exciting trip ever, but I am so glad they came! I love my Family  :)

So, the bottom line is that life is good! 
And I should start blogging again so I don't have a million things to catch up on.

Canned Enchiladas

I don't know about you but I really like good, easy recipes! 

I got a recipe for Enchiladas from a friend at work, probably about a year ago. Last night I finally got around to actually making them and it was so quick and easy! I made them from start to finish (including cook time and a trip to the store) in about an hour. I'm telling you, this on is a keeper!

I refer to these as "Canned Enchiladas" because it's just a bunch of can's that you mix together. 
(I modified the recipe for my mild taste-buds, which I will include in parentheses)


Canned Enchiladas

Mix together:
- 1 large can green enchilada sauce (1 small can)
- 2 cans cream of chicken soup (1 can cream of chicken & 1 can cream of mushroom)
- 1 cup sour cream
- 1 small can green chilies
- Shredded Chicken 
- Olives
(Chicken and olives were said to go in separate, but I decided to mix it in to make it quicker and easier)

Spread mixture in pan, just enough to cover the bottom. Put mixture and cheese (and chicken and olives if you'd rather do them separate) in tortillas. Spread remainder of mixture over top of tortillas in pan. Sprinkle cheese and olives over everything.

Bake at 350 for 30min


So easy. So good.
