Foods I Am Loving

I eat these two things on a daily basis.
They are so fast, so easy, so healthy, and so good!

Number One:


Tomato
Avocado
Mozerella Cheese 
(or String Cheese, if you're cheap like me)
Salt
Pepper
Garlic Salt
Balsamic Vinegar

I feel so healthy when I eat this!
I have it for lunch most days, or a snack.
It is so good!



Number 2:


Special K Red Berries
Vanilla Yogurt
Blackberries
Raspberries
Blueberries


The picture doesn't look that appetizing, but it is delicious!
Perfect for breakfast, lunch or a quick snack.

p.s.  berries are on sale 3 for $5! Gotta love Lee's  :)

Conference & Princesses

Confession: I don't think I got a thing out of General Conference.
(ok, maybe I got a little.... maybe)

Addy sat with me for a good portion of Conference. She was so good and quiet the whole time!

I went home for Conference, and Logan & Rachel came too. It was so much fun! But with 4 - 8 kids running around (Ty & Cambria were there too) and feeling like I was drugged on sleeping pills, it was a loosing fight from the get-go.

Also, this is what I look like with no shower for 2 days, not doing my hair or washing my face, no makeup, still in pajamas.... basically all loss of hygiene.
Attractive.

Don't get me wrong, I really do love conference and I'm so sad I wasn't able to be more attentive. I am definitely looking forward to the General Conference issue of the Ensign to come out. You better believe it will be read cover to cover!

This chair was like a kid magnet!

Durring Priesthood session, my mom, Rachel, and Cambria decided to go to the Deseret Book thing (I don't really know what it was....) This left Sierra and me to watch 8 kids under the age of 5. I have to say, it was probably one of the easiest babysitting experiences I've had! We watched Snow White and then made Princesses.

Believe it or not, we actually watched all of Snow White like this.

I made up the name "Princesses" When I made these with Evelyn for the first time. She loves Princesses and I knew if I called them that she would be 12 times more excited than if I just called them Hugged Pretzels. They are the perfect treat to make with kids!

For some reason, I can't cook for people anymore. I ruin it every time.
They were still ok and they all got eaten, but they just weren't as good as they should have been.

For the record, I promise I really can cook!

3 Hour Burritos

Yesterday, I decided to make Spinach & Beef Burritos. I got the recipe years ago in Young Womens. They are about the simplest burritos you could possibly make -  so simple a Beehive could make them!

Spinach & Beef Burritos

Ingredients:
- Hamburger
- Onion
- Enchilada Sauce
- Spinach
- Seasonings
- Cheese

Brown Hamburger and onions. Add whatever seasonings you want. Add 1 cup enchilada sauce. Then add 3 cups chopped fresh spinach. Spray 9x13 pan. Put hamburger/spinach mixture and grated cheese in flour tortillas, roll. Pour more enchilada sauce and cheese over all. cover with foil. Bake at 350* for 20 min. Serve with sour cream, green onions and tomatoes.

My thoughts were as follows: "here's a simple, fast, easy recipe..."

I guess I should have thought again!
At least on the "fast" part.

For some reason these babies took me three hours to make! 
No exaggeration. 

Three hours! 

I don't even know how I made it take that long!  
I'm pretty sure dragging this simple recipe out for that long deserves a recognition of it's own.... hence the blog post, I guess.

I chopped onions, cooked hamburger, added spinach and enchilada sauce.... even now, I haven't the slightest idea how it took me three hours.
That's almost one ingredient per hour!
ridiculous. 

Chelsey was awesome and sat in the kitchen and talked with me the whole time.
What a good roommate.

The really sad part is that by the time they came out, I had snitched so much that I wasn't even hungry anymore. 
Who can cook for three hours and not eat any of it. honestly. 

Lets just say that after three hours, I was a little disappointed with the outcome.

Also, I'm pretty sure that I ended up doubling the recipe somehow - another mystery that is yet to be solved - so in addition to my full pan of Spinach & Beef Burritos, I also have a full tupperware of Spinach & Beef filling ready to make a second batch.

Anyway, this is more than you ever wanted to know about spinach and beef and burritos, but it took me three hours, so I feel like this blog post has to somehow do justice to that three hours of my life that were swindled away by the making of said burritos.

Canned Enchiladas

I don't know about you but I really like good, easy recipes! 

I got a recipe for Enchiladas from a friend at work, probably about a year ago. Last night I finally got around to actually making them and it was so quick and easy! I made them from start to finish (including cook time and a trip to the store) in about an hour. I'm telling you, this on is a keeper!

I refer to these as "Canned Enchiladas" because it's just a bunch of can's that you mix together. 
(I modified the recipe for my mild taste-buds, which I will include in parentheses)


Canned Enchiladas

Mix together:
- 1 large can green enchilada sauce (1 small can)
- 2 cans cream of chicken soup (1 can cream of chicken & 1 can cream of mushroom)
- 1 cup sour cream
- 1 small can green chilies
- Shredded Chicken 
- Olives
(Chicken and olives were said to go in separate, but I decided to mix it in to make it quicker and easier)

Spread mixture in pan, just enough to cover the bottom. Put mixture and cheese (and chicken and olives if you'd rather do them separate) in tortillas. Spread remainder of mixture over top of tortillas in pan. Sprinkle cheese and olives over everything.

Bake at 350 for 30min


So easy. So good.

Come to think of it, there probably won't be many pictures on my blog for quite some time.

Anyway, try these enchiladas. 
You won't regret it.

Oh Food!

I realize that my last post was about food, but apparently I really like it. These are the only pictures on my camera from the last two weeks or so. haha!


I found this recipe for Baked Creamy Chicken Taquitos from a friends blog. They are so easy to make and so good! You can even make the filling ahead and then just make the taquitos as you please. Best meal ever!


Honestly, who can resist that!? The recipe calls for pepper jack cheese, but because I'm a wimp when it comes to spicy things, I think I'll try monterey jack cheese next time.


If the taquitos aren't doin' it for ya, maybe some delicious Strawberry Delight will do you good! Britt and I made this for "Tetris & a Treat" Friday night.
